For lunch today we had quick and easy zucchini fritters with natural yogurt as a dip and noodles as a side dish.
2 zucchini (about 350g)
4-5 tbsp spelled flour
1 tbsp oil
Some fresh or frozen herbs
1️⃣ Preheat the oven.
2️⃣ Wash and coarsely grate the zucchini.
3️⃣ Add the remaining ingredients & mix everything together well.
4️⃣ Form the buffers from the mixture. If the mixture is still a little runny, you can gradually add a little more flour until the desired consistency is achieved.
5️⃣ Place the buffers on a baking tray with baking paper and bake for about 15-20 minutes at 200°.
