Children's birthday cake - sugar-free

Sugar-free birthday cakes for children

I baked this birthday cake for a super cute little man for his second birthday.

The amount of ingredients listed below corresponds to 2 cake layers. I have the
Baked the cake dough twice and made a total of 4 cake layers.

❗The cake is relatively flat, but you can still easily cut two cake layers out of it!

Ingredients for 26cm Ø springform pan (two cake plates):
2 ripe bananas (or alternatively 80g sugar for older children)
2 eggs
200ml milk
250g flour (sifted)
1 pack of baking powder
40g butter (melted)
1 tbsp oil
1 tsp vanilla extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients for the cream (complete cake):
400g mascarpone
250g quark
600ml whipped cream
3 packs of cream stiffener
For older children or adults, 6 tablespoons powdered sugar
1 tsp vanilla extract⠀⠀⠀⠀
Food coloring (I used the food coloring from @eatarainbow_produkte - bought it myself)

Decoration:
fruit
Sheik animals
Candles
Colorful sprinkles

Preparation:
❗Preheat oven
1️⃣Peel the bananas and mash them with a fork.
2️⃣Put the eggs, butter, oil, milk, vanilla extract and banana (sugar instead of banana if necessary) in a bowl and mix everything together well.
3️⃣First mix the baking powder with the flour, then gradually add it to the banana-milk mixture and stir it into a dough with a hand mixer.
4️⃣Grease the cake tin a little and fill it with the cake batter.
5️⃣Bake for about 30-35 minutes at 180° top and bottom heat.
6️⃣Take out the cake, let it cool down and cut it horizontally through the middle. If necessary, cut away any odd spots.

🎂 Bake another cake as described above.

Preparation cream:
1️⃣Mix the mascarpone, quark, vanilla extract and, if necessary, powdered sugar with a hand mixer until creamy.
2️⃣Add the whipped cream and cream stiffener little by little and stir until the cream sets. As soon as the cream is stiff, stop!

3️⃣Color it in any color with food coloring and put it in the fridge for 1 hour.
Spread the cake bases with the cream and decorate:
1️⃣Paint the first cake base with cream and repeat this with other cake plates.
2️⃣Place the last layer on top and spread the cream over the entire cake.

Let cool for 2-3 hours and decorate as desired.

💡It's best to bake the two cakes the day before the birthday, prepare the cream and cut the cake plates and fill them with the cream.
And decorate just beforehand on the day of your birthday 🎂 🍓🦒🐘🐆
